Totally worth the hype, and the trouble of cutting up a butternut squash. When I stumbled upon this recipe in this month's pages of Southern Living Magazine I knew I had to give it a try.

For those of you who might be a little nervous about the prep for these butternut squash I have found this helpful tutorial which would make a world of difference. Also, you can purchase prepped butternut squash at your grocery stores in the produce aisle or in frozen foods.
