6- 7 apples, I prefer a tart variety such as Granny Smith peeled and chopped
2 Tbsp granulated sugar
1 1/2 tsp ground cinnamon
1 1/2 tsp lemon or orange juice
TOPPING
1 cup light brown sugar
3/4 cup old-fashioned oats quick oats can be used, but they may have a slightly different texture
3/4 cup all-purpose flour
2 tsp ground cinnamon
Pinch of kosher salt
1/2 cup cold unsalted butter, use GOOD butter such as Kerrygold cut into small cubes
Preheat your oven to 350°F and prepare an 8×8 baking dish or pie plate by greasing it with a small pat of butter.
In a mixing bowl, combine the chopped apples, granulated sugar, 1 1/2 teaspoons of cinnamon, and a splash of lemon or orange juice. Stir well to coat the apples evenly, then transfer the mixture to the prepared baking dish.
For the topping, mix together the brown sugar, oats, flour, 2 teaspoons of cinnamon, and salt in a separate bowl. Add the cold, diced butter and use a pastry cutter to blend it into the mixture until it resembles coarse crumbs. If you don’t have a pastry cutter, two forks or even your hands will work—just massage the butter into the dry ingredients until fully incorporated.
Spread the topping evenly over the apples, gently patting it down to ensure it adheres. Bake for 45–50 minutes, or until the topping is golden brown and the filling is bubbling.
